Ingredients

  • 1 can of Flaky Biscuits (2 cans if you want to do a 2nd batch)
  • 2 tablespoons Olive Oil
  • 1 can of Clams, drained and minced
  • ½ cup Vidalia Onion, chopped
  • ½ cup Green Pepper, chopped
  • ¾ cup Tomato, chopped
  • ½ cup Cheese, grated (you may use one type or a combination)
  • Real Bacon Bits
  • 1 Garlic clove, minced (you may also use Garlic Powder)
  • 1 teaspoon Basil
  • Salt, to taste
  • Pepper, to taste
  • Grated Cheese for topping

Directions

  1. Preheat oven to 350 degrees F, place oven rack in center position and place Muffin Tray on the Perforated Baking Sheet, then set aside
  2. Peel Biscuits into thin layers and line the wells of the Tray with your fingers, bringing the dough up the sides of the wells to the top
  3. Sauté 1 clove of Garlic in 2 tablespoons Olive Oil for about a minute, or until just starting to brown
  4. Add minced and drained Clams and Basil to taste (about 1 teaspoon) and sauté for another 1 or 2 minutes, then add the Onion and Green Pepper and sauté another 1-2 minutes or until they are slightly transparent
  5. Season with Salt and Pepper and remove from heat and place into Mixing Bowl and stir in chopped Tomato and grated Cheese
  6. Spoon mixture into the wells of the Tray and sprinkle Bacon pieces onto the top of each well, then top with grated Cheese
  7. Bake until Cheese is lightly browned and bubbling

*bon TIP: This is a good basic recipe and is easy to change up so feel free to add different seasonings or go heavier/lighter on the ingredients, too. Don’t make the dough on the bottom of wells too thick or it will taste doughy. Enjoy!
