Ingredients

  • 4 Egg Whites
  • 1 tablespoon Sugar
  • 1/2 teaspoon Salt
  • 1 package (14 ounces) Sweetened Flaked Coconut
  • 1/2 cup White Chocolate Chips, melted
  • 70-90 Mini Candy Eggs

Directions

  1. Preheat oven to 300 degrees F and place oven rack in center position. Place a Flexipan Tray on Perforated Baking Sheet and set aside
  2. In Mixing Bowl, Whisk together Egg Whites, Salt, and Sugar to combine, then gently mix in the Coconut.
  3. Drop 2 tablespoons of the Coconut mixture into each well of the Tray and using your thumbs, lightly press mixture up the sides of the wells to form little nest shapes.
  4. Bake nests for 25 to 28 minutes, until lightly golden on top. (Loosely place aluminum foil over the top of the tray if browning too quickly)
  5. Let the nests cool completely, then carefully remove from the tray.
  6. Melt the Chocolate and spoon a small amount in the bottom of each coconut nest, then place Candy Eggs in the nests and push down gently to set in Chocolate.
  7. Allow Chocolate to set and enjoy

Quick and Delicious

I wish I would have discovered this recipe a long time ago! This is my new go-to Easter treat recipe. The presentation is easy to accomplish AND its also really really yummy with just enough sweetness. This recipe has everything going for it. If you have kids around have them help you fill the wells then add on the white chocolate and candy eggs after the nets cool. They'll have a blast for sure!
